Girls, why are you this crazy?

Over the past few years, I have met some really nice women, I'm 21 by the way, and whenever we get to the actual dating phase, they freak out and disappear? I thought they were truly interested in me. My problem is that I can't seem to find anyone that takes dating seriously. Why do girls act this way?
